Loaded Potato and Meatload Casserole

This Meatloaf Mashed Potato Casserole combines the savory goodness of a classic meatloaf with creamy, cheesy mashed potatoes, topped with crispy bacon and melted cheddar. It’s an all-in-one comfort meal that’s easy to prepare and perfect for family dinners.

Ingredients
  

For the meatloaf base:

  • 1 pound ground beef
  • 1 large onion chopped
  • 1 egg
  • ½ cup breadcrumbs
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • ¼ cup sour cream

For the mashed potatoes:

  • 4-5 medium potatoes boiled and cubed
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • ¼ cup heavy whipping cream
  • ¼ cup sour cream
  • 1 teaspoon Salt
  • ½ teaspoon white pepper
  • 2 green onions chopped
  • 4-5 slices chopped bacon

For garnish:

  • 1/2 cup shredded cheddar cheese
  • 4-5 slices chopped bacon
  • 2 green onions chopped

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine ground beef, chopped onion, egg, breadcrumbs, ketchup, soy sauce, oregano, salt, and white pepper. Mix well.
  • Spread the meat mixture evenly in the bottom of a greased casserole dish.
  • Bake in the preheated oven for about 25-30 minutes or until cooked through.
  • In a separate bowl, add boiled potatoes, shredded cheddar cheese, butter, heavy whipping cream, sour cream, salt, white pepper, chopped green onion, and chopped bacon. Mix until well combined.
  • Once the meatloaf base is cooked, spread the mashed potato mixture evenly over the meatloaf.
  • Sprinkle shredded cheddar cheese and chopped bacon on top.
  • Place the casserole back in the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  • Once done, let it cool slightly before serving.
  • Garnish with additional green onion, if desired.
